ROSIE’S FIRST MONTH CAKE
So, I decided to bake a cake to celebrate Rosie’s first month birthday. Turning a month old is a big milestone and it should be celebrated. On her first month’s birthday, I bake a white chocolate mousse cake. I will try to bake her a cake every month until she turns one year old.
WHITE CHOCOLATE MOUSSE CAKE RECIPE
For the base cake, I use my favorite and easy recipe, the sponge cake recipe. It’s quick and easy and then added the cake with frosting and decorate it.
SPONGE CAKE RECIPE
INGREDIENTS:
1 cup flour
1 teaspoon baking powder
pinch of salt
6 eggs
1 teaspoon cream of tartar (or vinegar)
1 cup of sugar- divided
2 tablespoon water
1 teaspoon vanilla extract
DIRECTION:
Preheat oven to 175’c.
Combine the flour, baking powder, and salt. Set aside.
Separate the egg yolks and egg whites.
In a large bowl combine the egg yolks, vanilla, and water. Mix on medium speed. Add half a cup sugar and mix until the mixture is light yellow. Set aside.
In another bowl. Beat the egg whites. Add the cream of tartar. Beat again and add the remaining sugar. Beat on high speed until the mixture turns into white and foamy. Set aside.
Add the flour mixture to the egg yolks mixture and mix. Fold in the egg whites. Do not overmix.
Bake at 175’c for 30 minutes.
DECORATING THE CAKE
To decorate and frost the cake, I used the white chocolate mousse powder I bought from the shop. Just follow the instruction of the white chocolate mousse and then frost the cake. I tried to decorate the cake nicely as I wanted. I love how the cake turned out. It tastes good too!
