I’m going to make this post short and quick. Tonight I am going to share the Strawberry Cake recipe I’ve made on Christmas eve. It’s so easy to make and is good on any occasion. Read below for the recipe. And let me know what you think!
Strawberry Cake Recipe
For the cake (I used sponge cake)
6 large eggs, separated
1 cup (100 grams) sifted cake flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup (200 grams) granulated white sugar, divided
1 teaspoon pure vanilla extract
2 tablespoons water
Zest of a lemon or orange (outer skin)
3/4 teaspoon cream of tartar
Direction:
1. Preheat oven to 175’c.
2. Whisk the sifted flour with the baking powder and salt. Set aside.
3. Place the egg yolks and 2/3 cup of the sugar in the bowl. Using electric mixer beat on high speed until they are thick and light-colored. Then add the vanilla extract, water, and lemon zest. Set aside.
4. Whip the egg whites until foamy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the 1/3 cup (65 grams) of sugar and continue beating until the egg whites are shiny and just form stiff peaks.
5. Fold the flour mixture into the egg yolks mixture. Mix slowly until incorporated. Slowly add the egg whites into the mixture. Place the batter into the baking pan.
6. Bake the cake for 30-35 minutes.
For the frosting and filling:
Butter
Powdered Sugar
Vanilla extract
Strawberries (fresh or frozen)
What To Do:
1. While waiting for the cake to be cold, slice the strawberries three times. Reserve the middle part for the decoration. Set aside.
2. Make the butter frosting.
Beat butter and sugar until soft. Add vanilla extract. Beat again until it becomes very soft and fluffy.
3. As soon as the cake is cool, cut it in half.
4. Lie down the base cake. Add frosting on top and arrange sliced strawberries. Add more frosting on top of the strawberries.
5. Place the other half cake on top. Then cover the whole cake with frosting. Finally, arrange the sliced strawberries at the side of the cake. And decorate the top of the cake with strawberries, depends on how you want it to look like.
6. Put in the refrigerator and serve when chill.
