Banana pancakes are so easy to make and it is delicious too. I love making pancakes during the afternoon to serve as a snack. We don’t eat pancakes at breakfast as everyone does. We eat pancakes at dinner time. We normally make Finnish pancakes which are quite different to the pancakes that I normally cooked. However, it still delicious, very thin, and soft. I love trying out different kinds of flavors of pancakes. Today, however, I am going to share a banana pancakes recipe. I tried adding bananas to pancakes so that my little girl can eat it too. She is so picky and doesn’t like bananas. But she eats banana pancakes so it’s like a win-win for me!

Banana Pancakes Recipe
Ingredients:
2 cups flour
1 1/2 cups milk
2 bananas
2 eggs
2 tablespoon butter
2 tablespoon vegetable oil
3 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
Maple syrup
Cooking Procedure:
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mash one banana with a fork until almost smooth. Whisk in the eggs, then add the milk and vanilla. Whisk until well blended.
- Pour the banana mixture and the melted butter into the flour mixture. Fold the batter gently with a rubber spatula until just blended.
- Put one tablespoon of vegetable oil onto the pan, and wait a few minutes until it gets hot.
- Pour about 1/4 cup batter onto the pan and cook until the pancake is golden brown, about 2 minutes. Flip the pancake and cook until the bottom is golden brown.
- Add more oil into the pan using a brush, and repeat with the cooking procedure until it’s done.
- Serve the pancakes while still hot with maple syrup, sliced bananas, and any fruits if desired.
