Remember my last recipe post about Chicken Adobo? Well, here is the pork version of it. As we all know, adobo style recipes is very well known in the Philippines. As a Filipino myself pork adobo or chicken adobo is one my favorite food. I may say you are not a real Filipino if you do not like adobo. It may look so oily, but trust me this is so good when you eat with rice. Perfect for lunch or dinner.
Pork Adobo Recipe
Ingredients:
1-kilo pork belly (sliced in cubes)
2 tbsp crushed garlic
4 tbsp soy sauce
6 pieces dried bay leaves
4 tbsp vinegar
1 tbsp whole peppercorn
1 cup of water
pinch of salt
Cooking Procedure:
1. Marinate the pork with soy sauce and garlic for about 30 minutes to one hour.
2. Heat the pan or pot and put in the marinated pork. Cook for few a minutes.
3. Add the water, dried bay leaves, whole peppercorn, and bring to a boil.
4. Simmer for 30-40 minutes.
5. Add the vinegar and salt and let it boil for another 15 minutes or until there is little sauce left.
6. Serve with rice while still hot.
